Description

These small golden breads with rosemary are a real invitation to a culinary journey! I love preparing this recipe because it fills the whole house with a Mediterranean fragrance. The combination of wheat flour and classic flour gives a texture that is both soft and slightly crispy. Fresh rosemary brings an incomparable aromatic note, while sesame seeds add a touch of crunchiness and flavor. These breads are perfect to accompany a salad, a soup or simply to enjoy with a little olive oil. They are also ideal for an aperitif with friends or a sunny picnic. The preparation is a little long because of the resting time of the dough, but the result is really worth it!

Ingredients (8 ingredients)

  • 350 g Flour
  • 200 g Wheat flour
  • 0.5 cube Yeast
  • 2 piece Rosemary
  • 1 c. à soupe Olive oil
  • 2 c. à café Fine salt
  • to taste Sesame seeds
  • 3 c. à soupe Milk

350 g of flour and 200 g of wheat flour in the bowl and mix 10 Sek./Stufe 4.

0.5 cube of yeast and a pinch of sugar in 325 ml of lukewarm water and mix 2 Min./37°C/Stufe 2.

Dough prepare

The yeast mixture, 1 tbsp of olive oil, 2 tsp of fine salt and the flour mixture in the bowl and knead 3 Min./Knetstufe.

Rosemary chop

1 tbsp of rosemary needles in the bowl and chop 5 Sek./Stufe 7.

Rosemary to the dough add

Thermomix® Setting
1 min/Kneading speed

Add the chopped rosemary to the dough and knead 1 Min./Knetstufe.

Dough let rise

Put the dough in a container and let rise covered for about 2 hours in a warm place.

Dough divide and form

Knead the dough again on a floured work surface. Divide into 6 portions and spread them into small oval-shaped patties. Place them on a baking sheet lined with baking paper and let rest for 20 min.

Patties brown

Coat the patties with a thin layer of 3 tbsp of milk, then sprinkle with either the remaining rosemary needles or sesame seeds. Brown the patties for 15 min in the oven at 225°C.
