Description

This chicken and apricot couscous is a flavorful and satisfying one-pan meal that's perfect for a weeknight dinner. The sweetness of the apricots complements the savory chicken and the spicy harissa paste, creating a delicious and balanced dish. I love how quickly it comes together, making it ideal for busy evenings. Feel free to adjust the amount of harissa to your liking – a little goes a long way! This recipe is also great for meal prepping, as it reheats well. It's a hearty and comforting dish that the whole family will enjoy.

Ingredients (10 ingredients)

  • 1 tbsp olive oil
  • 1 piece onion
  • 200 g chicken breast
  • 1 piece fresh root ginger
  • 2 tbsp harissa paste
  • 10 piece dried apricots
  • 220 g can chickpeas
  • 200 g couscous
  • 200 ml hot chicken stock
  • 1 handful coriander

Preparation (6 steps)

Sauté onion

Add the olive oil to a large frying pan and heat over medium heat. Add the onion and cook for 1-2 mins until softened.

Cook chicken

Add the chicken to the pan and fry for 7-10 mins until cooked through and the onions have turned golden.

Add ginger and harissa

Grate over the ginger, stir through the harissa to coat everything and cook for 1 min more.

Combine ingredients

Tip in the apricots, chickpeas and couscous, then pour over the stock and stir once.

Cook couscous

Cover with a lid or tightly cover the pan with foil and leave for about 5 mins until the couscous has soaked up all the stock and is soft.

Serve

Fluff up the couscous with a fork and scatter over the coriander to serve. Serve with extra harissa, if you like.
