This aromatic green curry with chicken and potatoes is a delightful dish that's perfect for a comforting weeknight meal. I've been making this recipe for years, and it's always a hit! The combination of tender chicken, creamy coconut milk, and fragrant Thai green curry paste creates a symphony of flavors that will tantalize your taste buds. The new potatoes and green beans add a lovely texture and freshness to the dish. It's also great for meal prepping, as it tastes even better the next day. Serve it with fluffy rice for a complete and satisfying meal. Feel free to adjust the amount of curry paste to your liking for a milder or spicier flavor.

Ingredients (11 ingredients)

  • 225 g new potatoes
  • 100 g green beans
  • 1 tbsp vegetable or sunflower oil
  • 1 clove garlic
  • 1 tbsp Thai green curry paste
  • 400 ml coconut milk
  • 2 tsp Thai fish sauce
  • 1 tsp caster sugar
  • 450 g boneless skinless chicken
  • 2 piece lime leaves
  • 1 handful basil leaves

Preparation (9 steps)

Prepare Potatoes

Place 225g of new potatoes, cut into chunks, into a saucepan and boil for 5 minutes. Drain the potatoes and set aside.

Cook Green Beans

Add 100g of trimmed and halved green beans to the saucepan with the potatoes and cook for a further 3 minutes. Drain and set aside.

Chop Garlic

Add 1 clove of garlic to the mixing bowl and chop for 3 Sec./Stufe 7.

Sauté Garlic

Add 1 tbsp vegetable or sunflower oil to the mixing bowl and sauté the chopped garlic for 3 Min./120°C/Stufe 1.

Add 1 rounded tbsp or 4 tsp Thai green curry paste to the mixing bowl and cook for 1 Min./120°C/Stufe 1.

Add Coconut Milk and Seasoning

Pour in 400ml can of coconut milk, 2 tsp Thai fish sauce, and 1 tsp caster sugar into the mixing bowl. Cook for 2 Min./100°C/Stufe 1.

Add 450g bite-size chicken pieces to the mixing bowl. Cook for 8 Min./100°C/Linkslauf Stufe 1.

Tip in the cooked potatoes and green beans to the mixing bowl. Cook for 2 Min./100°C/Linkslauf Stufe 1 to warm through.

Add Lime Leaves and Basil

Add 2 finely shredded lime leaves (or 3 wide strips lime zest) and a good handful of basil leaves to the mixing bowl. Cook for 30 Sec./100°C/Linkslauf Stufe 1.
