Ingredients (12 ingredients)

  • 20 piece new potatoes, halved
  • 1 tablespoon butter
  • 2 clove garlic, minced
  • 2 tablespoon brown sugar
  • 1 cup red wine
  • 4 piece lamb shoulder steaks (6 ounce)
  • salt
  • pepper
  • 1 tablespoon cumin seeds
  • 2 bunch fresh spinach, cleaned
  • 0.25 cup sour cream
  • 2 tablespoon softened butter

Preparation (8 steps)

Cook the potatoes

Place 20 new potatoes, halved, into a saucepan and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 15 minutes. Drain and allow to steam dry for a minute or two. Set aside.

Melt butter and sauté garlic

Add 1 tablespoon of butter to the mixing bowl and melt for 2 Min./50°C/Stufe 1.

Add garlic and cook

Add 2 cloves of minced garlic to the mixing bowl and cook for 3 Min./120°C/Stufe 1.

Make the red wine sauce

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Add 2 tablespoons of brown sugar and 1 cup of red wine to the mixing bowl. Cook for 10 Min./Varoma/Stufe 1 without the measuring cup to reduce the sauce.

Keep the sauce warm

Pour the red wine sauce into a bowl, cover, and keep warm.

Season and prepare the lamb steaks

Season 4 (6 ounce) lamb shoulder steaks with salt and pepper to taste. Press 1 tablespoon of cumin seeds into the steaks on both sides.

Cook the spinach

Place 2 bunches of fresh spinach, cleaned, into the mixing bowl, season to taste with salt and pepper, and cook for 3 Min./100°C/Linkslauf Stufe 1 until the spinach has wilted.

Mash the potatoes

Place the cooked potatoes, ¼ cup of sour cream, and 2 tablespoons of softened butter into the mixing bowl. Mash for 20 Sec./Stufe 4. Season to taste with salt and pepper.
