Description

This spicy chicken with paprika rice is a flavorful and satisfying meal that's perfect for a weeknight dinner. The chicken is marinated in a piri-piri sauce, giving it a delicious kick, and the rice is infused with tomato and smoked paprika for a warm, smoky flavor. I've been making this dish for years, and it's always a hit with my family. It's also a great way to use up leftover cooked rice. Feel free to add other vegetables to the rice, such as peas or corn, for extra nutrients. This recipe is sure to become a new favorite!

Ingredients (7 ingredients)

  • 6 tbsp piri-piri marinade
  • 1 tbsp sunflower oil
  • 2 piece peppers
  • 4 tbsp tomato purée
  • 1 tbsp sweet smoked paprika
  • 250 g cooked rice
  • vegetables or salad

Chicken Preparation

Preheat oven to 200°C (180°C fan). Slash each piece of chicken 3 times. Pour 6 tbsp piri-piri marinade over the chicken and marinate in the fridge if you have time. If not, mix well and arrange, skin-side up, in a roasting tin. Cook for 30 mins, then increase heat to 220°C (200°C fan) and cook for about 15 mins more until the skin is crispy and golden.

Peppers and Spring Onions

Add 1 tbsp sunflower oil to the mixing bowl and 2 peppers, cut into pieces. Cook for 5 mins/120°C/Stufe 1.

Add Tomato Puree and Paprika

Thermomix® Setting
10 sec/Speed 2

Add 4 tbsp tomato purée and 1 tbsp sweet smoked paprika to the mixing bowl. Stir for 10 Sec./Stufe 2.

Add Rice

Thermomix® Setting
3 min/212°F/Speed 2 100

Add 250g cooked rice to the mixing bowl. Cook for 3 Min./100°C/Stufe 2, breaking up with a spatula so all the grains are coated well.

Final Rice Heating

Thermomix® Setting
2 min/212°F/Speed 2 100

Heat until piping hot for 2 Min./100°C/Stufe 2. Scrape any that sticks off the bottom so you get some soft and some crispy parts.

Serving

Scatter the green parts of the spring onion on top and serve with the chicken, and some vegetables or salad, if you like.
