Description

This creamy broccoli or zucchini cream soup is a light and healthy dish that is quick to prepare. Refined with coconut milk, it is also suitable for a lactose-free diet. Ideal as a starter or light main course, perfect for a low-calorie meal.

Ingredients (9 ingredients)

  • 250 g Broccoli or zucchini
  • 1 piece medium-sized onion
  • 1 piece Garlic clove
  • 50 ml Coconut milk
  • 2 tsp Coconut oil
  • 0.5 Teelöffel Curry powder
  • 0.5 tsp Natural salt
  • 2 tbsp chopped Parsley
  • Pepper

Preparation (6 steps)

Prepare broccoli or zucchini

Divide 250 g broccoli into small florets or dice 250 g zucchini and set aside.

Chop and sauté onion and garlic

Put 1 medium-sized onion (70 g) into the mixing bowl and chop for 3 sec./speed 5. Add 2 teaspoons of coconut oil (10 g) and sauté for 3 min./120°C/speed 1. Finally, add 1 clove of garlic and chop for 3 sec./speed 7 and sauté briefly.

Cook broccoli or zucchini

Add 250 g broccoli or zucchini, season with 1/2 teaspoon of natural salt and pour in about 250 ml water. Simmer for about 5 minutes/100°C/speed 1.

Refine soup

2 min/194°F/Speed 1 194°F

Add 1/2 teaspoon of curry powder and 50 ml coconut milk and bring to the boil again briefly for 2 min./90°C/speed 1. Set aside and let cool briefly.

Puree soup

Thermomix® Setting
30 sec/Speed 8-10

Now puree coarsely or finely with a tablespoon of parsley in a blender or with a hand blender, as desired. In the Thermomix: puree for 30 sec./speed 8-10.

Serve soup

Sprinkle the finished soup with 2 tablespoons of chopped parsley and pepper and serve.
