Description

This carrot pesto is a great alternative to classic pesto! I especially like to make it in the spring when the carrots are nice and juicy. The sweetness of the carrots goes wonderfully with the slight spiciness of the chili and the acidity of the lime. The fresh goat cheese provides a creamy note and makes the dish a real taste experience. Perfect as a quick lunch or as a side dish for grilling. The pesto can also be prepared in advance and stored in the refrigerator. Be sure to try it out!

Ingredients (12 ingredients)

  • 5 piece large Carrot(s)
  • 3 piece Shallot(s)
  • 0.5 piece Chili pepper(s) fresh
  • 1 Schuss Orange juice
  • 50 g Parmesan
  • 2 tbsp Olive oil
  • 1 tsp Pepper
  • 3 tbsp Honey
  • 50 g Pine nuts roasted
  • 1 piece Lime(s) grated zest and juice
  • 125 g Fresh goat cheese
  • 500 g Olive oil for the pesto

Preparation (7 steps)

Prepare carrots, shallots and chili

Peel 5 large carrots and cut into uniform, very small cubes. Peel 3 shallots and dice finely. Core 0.5 fresh chili pepper and cut into tiny cubes. Grate 50 g Parmesan.

Sauté carrots, shallots and chili

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 2 tbsp olive oil to the mixing bowl and heat for 3 min./120°C/speed 1. Add carrot cubes, shallot cubes and chili and sauté for 5 min./120°C/speed 1.

Deglaze and simmer

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 1 splash of orange juice, 3 tbsp honey, 1 tsp pepper and simmer for 5 min./100°C/speed 1 until the carrot pieces are cooked, but still have a little bite.

Refine pesto

Add 50 g roasted pine nuts, grated zest and juice of 1 lime and 50 g Parmesan.

Puree pesto

Thermomix® Setting
30 sec/Speed 8-10

Add 500 g olive oil for the pesto and puree for 30 sec./speed 8-10, depending on the desired consistency.

Prepare and mix pasta

Cook 500 g pasta (variety according to taste) according to package instructions. Mix pasta with pesto. Add some cooking water or olive oil if necessary.

Arrange and serve

Arrange pasta in a deep plate and serve decorated with 125 g fresh goat cheese flakes and fresh thyme.
