Description

This shrimp risotto is a comforting and tasty dish, perfect for a dinner with friends or a special occasion. I love the creamy texture of Arborio rice, which perfectly absorbs the flavors of the broth and white wine. Pink shrimp bring a touch of freshness and delicacy, while carrots and peas add a note of color and crunch. Mascarpone and grated Parmesan, added at the end of cooking, make this risotto irresistibly creamy. A simple dish to make with the Thermomix®, which guarantees a perfect result every time. Feel free to add a pinch of fresh parsley for an extra touch of freshness!

Ingredients (13 ingredients)

  • 400 g Arborio risotto rice
  • 200 g pink shrimps
  • 125 ml dry white wine
  • 2 piece carrots
  • 1 poignée frozen peas
  • 1 bunch parsley
  • 1 c. à s. mascarpone
  • 4 c. à s. grated parmesan
  • 1 cube broth
  • 1 tbsp olive oil
  • 1 piece onion
  • 1 pinch fine salt
  • 1 pinch pepper

Preparation of vegetables

Peel the onion and cut it into four. Peel the carrots and cut them into pieces. Put the onion in the Thermomix bowl and mix 3 Sec./Level 5. Add the carrots and mix 3 Sec./Level 5. Scrape the sides of the bowl with a spatula.

Sauté the vegetables

Add a little olive oil to the Thermomix bowl. Sauté the onions and carrots 3 Min./120°C/Level 1.

Cooking the rice

2 min/248°F/Speed 1 120

Add the Arborio rice to the Thermomix bowl and sauté 2 Min./120°C/Level 1. Add the dry white wine and reduce 1 Min./Varoma/Level 1 without the measuring cup.

Adding vegetables and broth

15 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Add the frozen peas to the Thermomix bowl. Prepare a broth according to the instructions for use and keep it warm. Add 1 ladle of hot broth to the Thermomix bowl and cook 15 Min./100°C/Gentle stir level/Reverse. Add broth ladle by ladle when it is absorbed.

Cooking the shrimps

5 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Add the pink shrimp to the Thermomix bowl and cook 5 Min./100°C/Gentle stir level/Reverse.

Finish the risotto

Remove the bowl from the Thermomix. Add the mascarpone and grated Parmesan off the heat. Mix gently. Serve immediately and sprinkle with chopped fresh parsley.
