Description

This dog bone cake is a great recipe for birthdays or other festive occasions. The cake consists of a light and a colored cake base, a delicious cream cheese cream filling and a bittersweet ganache. The decoration with marzipan dog bones makes the cake a real eye-catcher. The preparation time is approx. 3 hours and the recipe is designed for 12 servings.

Ingredients (16 ingredients)

  • 250 g Flour
  • 1 tsp Baking powder
  • 100 g Almonds
  • 150 g Butter, soft
  • 150 g Sugar
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 3 piece Eggs
  • 200 g Cream
  • 200 g Cream cheese
  • 50 g Icing sugar
  • 1 packet Cream stiffener
  • 100 g whole milk|chocolate (if you don't like whole milk chocolate, you can also use another chocolate)
  • 100 g Cream
  • Icing sugar
  • Food coloring

Preparation (15 steps)

Grind almonds

Put 100 g almonds in the mixing bowl and grind for 10 sec/speed 10. Transfer and set aside.

Prepare dough

Put 150 g soft butter, 150 g sugar, 1 packet of vanilla sugar and 1 pinch of salt in the mixing bowl and beat until fluffy for 2 min/speed 4.

Add eggs

Add 3 eggs one after the other through the lid opening and stir in for 15 sec/speed 3 each time.

Mix and add dry ingredients

Add 250 g flour, 1 tsp baking powder and the 100 g ground almonds and process into a smooth dough for 2 min/kneading stage.

Divide and bake dough

Halve the dough. Put one half into a greased and floured springform pan (20 cm diameter) and smooth it out. Place the other half in a separate bowl and color with food coloring. Place the colored dough in a greased and floured springform pan (20 cm diameter) and smooth it out. Bake both bases in a preheated oven at 180°C top/bottom heat for approx. 25-30 minutes. Do a stick test!

Let bases cool

Remove the baked bases from the oven, let them cool briefly in the tin, then turn them out onto a wire rack and let them cool completely.

Prepare filling

Put 200 g cream in the mixing bowl and whisk with the butterfly for 2-3 min/speed 3.5 until stiff. Transfer and chill.

Prepare cream cheese cream

Thermomix® Setting

Put 200 g cream cheese, 50 g icing sugar and 1 packet of cream stiffener in the mixing bowl and mix for 30 sec/speed 3.

Fold in cream

Carefully fold the whipped cream into the cream cheese cream using a spatula.

Fill cake

Cut the light base horizontally once. Spread the lower base with half of the cream cheese-cream. Place the second light base on top and spread with the remaining cream. Place the colored base on top.

Prepare ganache

Put 100 g dark chocolate in pieces into the mixing bowl and chop for 10 sec/speed 8. Push down with the spatula.

Add cream and melt

3 min/122°F/Speed 2 122°F

Add 100 g cream and melt for 3 min/50°C/speed 2.

Process ganache

Let the ganache cool down a little and then pour it over the cake. Spread with a spatula or knife.

Prepare decoration

Knead 100 g marzipan raw material with a little icing sugar and roll out. Cut out dog bones with a cookie cutter.

Decorate cake

Decorate the cake with the marzipan dog bones and chill until serving.
