Description

These stuffed chicken bundles are a delicious and easy idea to prepare, perfect for a quick lunch or dinner. The cooked ham and stringy cheese filling makes every bite an explosion of flavor. I often prepare them when I have little time but still want to bring something tasty and different to the table. The crunchy breading, then, is the icing on the cake! They can be accompanied with a fresh salad or baked potatoes for a complete and satisfying meal. Try them, they will win you over!

Ingredients (8 ingredients)

  • 4 piece Chicken breast
  • Cooked ham
  • Emmentaler
  • Breadcrumbs
  • Parmigiano Reggiano
  • 2 piece Eggs
  • to taste Salt
  • Seed oil for frying

Preparation (10 steps)

Preparation of the chicken breast

Clean the chicken breasts by removing the scraps and the central bone. Fillet the chicken breast, obtaining slices that you will place and cover with parchment paper.

Flatten the chicken slices

Place the chicken slices between two sheets of parchment paper and beat them with a meat mallet with a movement from the center outwards to thin them.

Obtain the chicken discs

Obtain discs from the chicken slices, helping yourself with a glass or a pastry cutter to create discs that are as regular as possible.

Obtain the ham and cheese discs

Cut four discs from the cooked ham slices with the same pastry cutter or glass used for the chicken. Proceed in the same way also with the Emmentaler.

Assembly of the bundles

Place a slice of cooked ham and a slice of Emmentaler on a disc of chicken breast, then place another slice of chicken breast on top to close the bundle. Proceed in the same way with the other 3 bundles.

Preparation of the breading

Beat the eggs with a pinch of salt in a bowl. Meanwhile, pour the breadcrumbs and grated Parmesan cheese into the bowl and mix: 5 Sec./Stufe 4.

Breading the bundles

Pass the bundles first in the beaten egg and then in the breadcrumbs mixed with Parmesan cheese, perform this operation twice to obtain a consistent breading.

Frying the bundles

Heat a finger of seed oil in a pan, preferably iron. When the oil has reached the right temperature for frying, dip the bundles in it, cooking them first on one side and then on the other.

Drying and salting

When golden brown and cooked through, remove the bundles from the oil and place them on sheets of straw paper or kitchen absorbent paper so that the excess oil dries, then salt them.

Serve

Serve the hot bundles accompanied with lemon slices and a fresh salad.
