Description

This winter purslane salad with pear is a real treat! The combination of the slightly sour winter purslane and the sweetness of the pear is simply unbeatable. The dressing with orange juice and balsamic vinegar gives the salad a fruity note. I especially like to make this salad in autumn when pears are in season. It is quick to prepare and is perfect as an appetizer or light meal. If you like, you can add a few chopped nuts. An absolute favorite recipe!

Ingredients (7 ingredients)

  • 100 g Winter purslane, Claytonia
  • 2 piece Pear(s)
  • 3 tbsp Orange juice
  • 1 tsp Mustard, heaped
  • 4 tbsp Balsamic vinegar
  • 3 tbsp Olive oil
  • 1 tsp Cane sugar

Preparation (5 steps)

Prepare winter purslane

Pick over 100 g winter purslane, wash and spin dry. Then set aside.

Prepare pears

Wash, quarter, core and cut 2 pears into thin wedges. Then set aside.

Prepare dressing

Thermomix® Setting
20 sec/Speed 3

Put 3 tbsp orange juice, 1 tsp heaped mustard, 4 tbsp balsamic vinegar, 3 tbsp olive oil and 1 tsp cane sugar in the mixing bowl and mix for 20 sec./speed 3.

Season dressing

Thermomix® Setting
5 sec/Speed 2

Season the dressing with salt and pepper and stir for another 5 sec./speed 2.

Arrange salad

Mix the winter purslane and pear wedges in a bowl. Pour the dressing over it and mix carefully. Serve immediately.
