Description

This beef fillet pasta with colorful peppers and sweet figs is a real taste experience! The tender beef fillet harmonizes wonderfully with the fruity sweetness of the figs and the crunchy peppers. A hint of lemon provides the necessary freshness. I like to make this pasta when it should be something special, but still needs to be quick. The preparation is uncomplicated and the result is simply delicious. Perfect for a festive dinner or a cozy evening with friends. Sprinkled with fresh parsley, a real eye-catcher!

Ingredients (13 ingredients)

  • 2 piece Spring onions
  • 150 g Mini peppers
  • 2 piece Figs
  • 300 g Pasta - e.g. Penne
  • 5 tbsp Breadcrumbs
  • 3 clove Garlic
  • 2 tbsp Butter
  • 4 tbsp Olive oil
  • 1 piece Organic lemon - juice and zest
  • 1 tbsp Chopped parsley
  • 400 g Beef fillet
  • to taste Salt
  • to taste Pepper

Preparation (6 steps)

Prepare spring onions and garlic

Cut 2 spring onions into rings and set aside. Put 3 cloves of garlic into the mixing bowl and chop for 3 sec./speed 7. Scrape down from the edge with the spatula.

Sauté garlic and roast breadcrumbs

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tablespoons of butter to the chopped garlic in the mixing bowl and sauté for 3 min./120°C/speed 1. Then add 5 tablespoons of breadcrumbs and roast for another 2 min./120°C/speed 1. Transfer and set aside.

Sauté vegetables

Put half of 4 tablespoons of olive oil into the mixing bowl. Add 150g mini peppers (quartered) and 2 figs (sliced) and sauté for 5 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
3 min/212°F/Speed 1 100

Add juice and zest of 1 organic lemon, 300g cooked pasta (e.g. penne) and 125 ml pasta water to the vegetables in the mixing bowl. Season with salt and pepper and heat for 3 min./100°C/speed 1.

Sear beef fillet

Season 400g beef fillet with salt and pepper. Heat the remaining olive oil in a pan and sear the fillet on both sides, then cut into slices.

Arrange

Distribute the pasta on the plates, sprinkle with 1 tablespoon of chopped parsley and serve with beef fillet strips and garlic crumble.
