Description

These meatballs with potatoes are a comforting and flavorful dish, perfect for enjoying with family. Ingredients (20 ingredients)

  • 300 g Minced beef
  • 300 g Minced pork
  • 2 clove Garlic
  • 1 piece Onion
  • 2 slice Crustless sliced bread
  • Milk to soak the bread
  • 1 piece Beaten egg for coating in flour
  • Wheat flour for coating in flour
  • Olive oil for frying
  • 2 clove Garlic for the sauce
  • 4 piece Onion for the sauce
  • 75 ml Brandy for the sauce
  • 150 ml White wine for the sauce
  • Extra virgin olive oil for the sauce
  • to taste Ground black pepper for the sauce
  • 1 piece Bay leaf for the sauce
  • to taste Salt for the sauce
  • 500 ml Beef broth for the sauce
  • 2 piece Carrot in brunoise for the sauce garnish
  • 150 g Peas in brunoise for the sauce garnish

Preparation (10 steps)

Preparation of the meatball dough

Soak 2 slices of crustless sliced bread in milk. In a large bowl, mix 300 g of minced beef and 300 g of minced pork. Add the soaked and drained bread, 2 finely chopped cloves of garlic, 1 finely chopped onion, 1 beaten egg, salt and pepper to taste. Mix all the ingredients well. Taste the saltiness by cooking a small portion on the griddle. Let the mixture rest in the refrigerator for 60 minutes to allow the flavors to settle.

Preparation of the base sauce

Peel 4 onions and cut into quarters. Place in the Thermomix bowl and chop for 5 Sec./Stufe 5. Lower the remains from the walls of the bowl with the spatula.

Sautéing the sauce

Add extra virgin olive oil to the Thermomix bowl along with the crushed onion. Sauté for 20 Min./120°C/Stufe 1.

Add alcohols and reduce

5 min/Varoma/Speed 1 Varoma

Pour 75 ml of brandy and 150 ml of white wine into the Thermomix bowl. Reduce for 5 Min./Varoma/Stufe 1 without the measuring cup to promote alcohol evaporation.

Cooking the sauce

Add 500 ml of beef broth, ground black pepper, bay leaf and salt to taste in the Thermomix bowl. Cook for 10 Min./100°C/Stufe 2.

Crush and strain the sauce

Thermomix® Setting
30 Seg./Speed 10

Remove the bay leaf. Crush the sauce in the Thermomix bowl for 30 Sec./Stufe 10. Strain the sauce for a finer texture. If the sauce is too light, thicken with cornstarch diluted in water.

Form and fry the meatballs

Form the meatballs in portions of between 35 and 40 grams. Coat the meatballs in wheat flour. Heat olive oil in a pan over medium heat. Fry the meatballs until they are golden brown on all sides. Drain the excess oil on a wire rack.

Cook the meatballs in the sauce

Add the meatballs to the sauce in the Thermomix bowl. Incorporate 2 carrots in brunoise and 150 g of peas in brunoise. Cook for 15 Min./100°C/Giro a la izquierda/Stufe 1.

Prepare the potatoes

Peel the potatoes and cut them into 1x1 centimeter cubes. Reserve in cold water until ready to fry. Dry the potato cubes well. Heat oil in a pan to 160 ºC and confit the potatoes until they are soft and cooked. Raise the oil to 180 ºC and fry the potatoes for a couple of minutes, until they are golden brown on the outside and slightly crispy.

Serve

Serve the meatballs hot, saucing the meatballs on the plate and adding a few fried potatoes.
