  • 3 kg Potatoes
  • 3 piece Leek
  • 0.5 piece Celery root
  • 2 piece Carrots
  • Oil
  • 1 piece large Onion
  • Garlic
  • Spices (lovage, thyme, oregano / marjoram, nutmeg, etc)
  • Bacon or ham cubes
  • 1 tbsp Gemüsebrühe (selbstgemacht)

Chop Onions

Add onion to the mixing bowl and chop for 3 sec./level 5.

Sauté Onions

Add oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Set Onions Aside

Remove the sautéed onions from the mixing bowl and set aside.

Fry Bacon/Ham

Fry bacon or ham cubes in a separate pan. Add the sautéed onions and fry briefly. Then set aside.

Prepare Vegetables

Peel and dice the potatoes, carrots and celery. Cut the leek into slices.

Cook Potatoes

Cover the potatoes with water and add salt. Cook for 25 min./100°C/level 1 until the vegetables are soft.

Collect Cooking Water

Pour off the cooking water from the vegetables and collect it in a separate pot. Do not throw away!

Puree Soup

Puree the cooked vegetables in the mixing bowl for 30 sec./level 8-10. If necessary, add some of the cooking water to achieve the desired consistency.

Stir in Bacon and Onions

Add the fried bacon or ham cubes and the onions to the mixing bowl and stir in for 2 min./90°C/reverse rotation level 1.

Season the soup with lovage, thyme, oregano/marjoram, nutmeg, garlic and other spices of your choice. Bring to a boil for 2 min./100°C/reverse rotation level 1.

Prepare Jars

While seasoning, heat the jars in the oven or with hot water to prevent them from cracking during filling.

Fill Soup

Fill the hot potato soup into the preheated jars and close with the appropriate twist-off lids.

Boil Down

Place the filled jars in a preserving pot, cover with water to at least 3/4 and boil for 120 minutes at 90 degrees.

Let Cool Down

After boiling, let the jars cool down. They should be securely closed and can be stored on the shelf.

Prepare Vegetables

Briefly fry carrots, celery, and leek to create roasted aromas. Set some aside, add some to the potatoes later.
