Homemade curry paste, red or green, for flavoring dishes.

Ingredients (13 ingredients)

  • 0.5 tsp black Pepper
  • 0.5 tsp Cumin
  • 0.5 tsp Coriander seeds
  • 1 Stängel Lemon grass
  • 1 tsp Galangal/Ginger - chopped
  • 1 tsp Turmeric
  • 2 piece Shallots - chopped
  • 3 Zehen Garlic - chopped
  • 8 piece red / green Chili peppers - chopped
  • 1 piece Lime peel
  • 1 piece Lime juice
  • 0.5 tsp Salt
  • 2 tbsp Peanut oil

Preparation (7 steps)

Grind spices

Thermomix® Setting
10 sec/Speed 10

Add black pepper, cumin and coriander seeds to the mixing bowl and grind for 10 sec./speed 10.

Transfer spices

Remove the ground spices from the mixing bowl and set aside.

Chop lemon grass

Thermomix® Setting
5 sec/Speed 5

Add lemon grass to the mixing bowl and chop for 5 sec./speed 5.

Chop shallots and garlic

Thermomix® Setting
3 sec/Speed 5

Add shallots and garlic to the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Add chili and remaining ingredients

Add galangal/ginger, turmeric, chili peppers, lime zest, salt, lime juice, peanut oil and the ground spices to the mixing bowl.

Prepare curry paste

Thermomix® Setting
30 sec/Speed 8

Puree all ingredients for 30 sec./speed 8. If necessary, push down with the spatula and repeat the process.

Fill curry paste

Fill the finished curry paste into a screw-top jar and cover with peanut oil. Keep cool.
