Ingredients (10 ingredients)

  • 80 g Leek
  • 80 g Carrot
  • 80 g Celery stalk
  • 2 piece Shallots
  • 1 piece Clove of garlic
  • 40 g Butter
  • 300 g Rice
  • 2 Gläser White wine
  • 0.75 l Hot meat broth
  • 3 tbsp Parmesan, freshly grated

Preparation (5 steps)

Prepare vegetables

Clean, wash and dice the leek, carrot and celery. Peel and finely chop the shallots and garlic.

Sauté shallots and garlic

Put the butter in the mixing bowl and melt for 3 minutes/120°C/speed 1. Add the shallots and garlic and sauté for 3 minutes/120°C/speed 1. Add the vegetables and sauté briefly for 3 minutes/100°C/speed 1.

Sauté rice

Add the rice and sauté for 3 minutes/120°C/speed 1 without a measuring cup until translucent. Add the wine and let it reduce for 2 minutes/100°C/speed 1 without a measuring cup.

Cook risotto

Gradually add the hot meat broth, ladle by ladle, and let it absorb each time while stirring, until the rice is cooked after about 20 minutes. 20 minutes/100°C/gentle stir setting/reverse

Finish risotto

Remove the risotto from the stove, let it sit briefly and only then stir in the Parmesan and serve.
