Description

This savory strudel with artichokes and ham is an excellent alternative to the classic savory pie. The combination of artichokes, cooked and flavored, with ham and stringy provola, makes it a rich and tasty dish, perfect for a Sunday brunch or as a delicious appetizer. I often prepare it when I have guests for dinner and it is always a great success. The preparation is quite simple, especially with the help of our trusted Thermomix®. You can vary the filling to your liking, adding other cheeses or seasonal vegetables. A tip: serve it warm to best appreciate the flavors!

Ingredients (12 ingredients)

  • 1 rotolo rectangular puff pastry
  • 4 piece artichokes _fresh or frozen_
  • 1 clove garlic
  • 50 ml white wine
  • 100 ml water
  • 100 g speck _sliced_
  • 100 g provola _cubed_
  • olive oil
  • fine salt
  • 1 tuorli egg yolks
  • sesame seeds
  • poppy seeds

Preparation (6 steps)

Cleaned and cut artichokes

Let's start by cleaning the artichokes: cut the stem, eliminate all the harder outer leaves and the tip. Cut the artichokes in half and, if we find it, eliminate the internal beard. We also clean the stems by cutting away the more woody outer part. Cut the artichokes and stems into thin slices.

Put 1 clove of garlic in the bowl and chop: 3 Sec./Stufe 7.

Cooked artichokes

10 min/212°F/Speed 1/Linkslauf 100 Reverse

Add a drizzle of olive oil, the artichokes cut into thin slices, the stems cut into rounds, 50 ml of white wine, 100 ml of water and fine salt to taste. Cook for 10 Min./100°C/Stufe 1/Linkslauf.

Stuffed strudel

Unroll 1 roll of rectangular puff pastry on the surface and place 100 g of sliced speck on top to cover the entire surface. In the central part add the artichokes arranged lengthwise. On top we put 100 g of cubed provola.

Sealed and decorated strudel

Close the puff pastry on the filling, using the supplied baking paper. With your fingers, seal the ends of the strudel well. Leaving the baking paper underneath, place it on a baking tray and brush it with 1 egg yolk. Finally, decorate by sprinkling it with a mix of poppy seeds and sesame seeds to taste.

Strudel baked in the oven

Bake and cook in a ventilated oven at 180 °C for 20-25 minutes.
