Description

This sour soup with dried fruit and flour dumplings is a real traditional dish that is especially warming in the cold season. I like to make it when I feel like something hearty with a slightly sweet note. The combination of prunes, apricots and apples gives the soup a fruity depth that harmonizes perfectly with the savory vegetables. The homemade flour dumplings make the soup a complete meal. Ideal for a cozy family dinner or as a warming meal after a long winter walk. The preparation takes a little time, but the effort is definitely worth it!

Ingredients (18 ingredients)

  • 250 g Prune(s)
  • 200 g Apricot(s) dried
  • 125 g Apples (apple rings), dried
  • 4 Liter Water
  • 2 piece Parsley root(s) peeled, sliced or cut into sticks
  • 250 g Celeriac peeled, sliced or cut into sticks
  • Salt
  • White pepper from the mill
  • Vinegar
  • Sugar
  • Tarragon dried
  • 500 g Asparagus - pieces (can)
  • 300 g Peas frozen
  • 1 bunch Parsley smooth, finely chopped
  • 125 ml Water
  • 40 g Butter
  • 70 g Flour
  • 1 piece Egg(s)

Preparation (11 steps)

Soak dried fruit

Cover 250 g prunes, 200 g dried apricots and 125 g dried apple rings with water overnight and soak.

Chop vegetables

Cut 2 parsley roots (peeled) into slices or sticks. Cut 250 g celeriac (peeled) into slices or sticks.

Prepare broth

Thermomix® Setting

Put 4 liters of water in the mixing bowl. Add the ham bone and cook for 120 min./100°C/speed 1.

Prepare meat

Remove the ham bone from the mixing bowl, remove the meat and cut into cubes.

Cook soup

20 min/212°F/Speed 1 100

Put parsley roots, celery, the soaked dried fruit with the soaking water, salt, pepper, vinegar, sugar and dried tarragon in the mixing bowl and cook for 20 min./100°C/speed 1.

Add more ingredients

Add the diced meat, 500 g asparagus pieces (from the can) and 300 g frozen peas to the mixing bowl and heat for 5 min./100°C/reverse speed 1.

Prepare dough for the dumplings

Thermomix® Setting
3 min/212°F/Speed 1 100

Put 125 ml water, 40 g butter and salt in the mixing bowl and bring to a boil for 3 min./100°C/speed 1.

Stir in flour

Thermomix® Setting
20 sec/Speed 4

Put 70 g flour in the mixing bowl and stir for 20 sec./speed 4 until a ball of dough forms.

Stir in egg

Remove the mixing bowl from the Thermomix and let it cool down a little. Add 1 egg and stir in with a spatula. Season with nutmeg.

Form dumplings and let steep

5 min/212°F/Gentle stir speed 100

Form fluffy dumplings from the dough. Pour 500 ml of the soup broth into the mixing bowl and add the dumplings. Let it steep for 5 min./100°C/gentle stir setting.

Finish soup

Put the dumplings with the broth back into the mixing bowl, season sweet and sour and serve sprinkled with 1 bunch of finely chopped, smooth parsley.
