Description

This spicy chicken and black bean stew is a hearty and flavorful dish that's perfect for a chilly evening. I've been making this recipe for years, and it's always a hit! The combination of tender chicken, smoky chipotle peppers, and hearty black beans creates a delicious and satisfying meal. Ingredients (11 ingredients)

  • 2 tbsp sunflower oil
  • 2 piece onions
  • 4 piece boneless, skinless chicken thighs
  • 3 clove garlic cloves
  • 1 tbsp oregano
  • 1 tsp cumin seeds
  • 3 tbsp chipotle
  • 350 g passata
  • 0.5 piece chicken stock shot or cube
  • 400 g can black beans
  • 0.5 piece lime

Preparation (7 steps)

Chop onions

Add 2 onions to the mixing bowl and chop for 3 seconds/speed 5.

Add 2 tbsp sunflower oil to the mixing bowl and sauté for 3 minutes/120°C/speed 1.

Add chicken and spices

Add 4 boneless, skinless chicken thighs, 3 garlic cloves, 1 tbsp oregano, 1 tsp cumin seeds, a small pinch of sugar, and some seasoning to the mixing bowl. Cook for 2 minutes/120°C/speed 1.

Add chipotle and passata

Add 3 tbsp chipotle and cook for 3 minutes/100°C/speed 1.

Add remaining ingredients and simmer

Pour in 350g passata, 100ml water, and add 1/2 chicken stock shot or cube. Season and bring to a simmer. Cook for 40 minutes/100°C/speed 1/Linkslauf.

Shred chicken and add beans

Remove the chicken from the mixing bowl and shred it using two forks. Return the shredded chicken to the mixing bowl, add 400g can black beans, and simmer for 5 minutes/100°C/speed 1/Linkslauf.

Turn off the heat and squeeze in the juice of 1/2 lime. Stir well with the spatula.
