Description

A classic of Italian cuisine, tagliatelle with porcini mushrooms and tomato is a dish rich in flavor and autumn aromas. The combination of fresh pasta with the creamy sauce based on porcini mushrooms, garlic, white wine and tomato purée is simply irresistible. I often prepare it when I want to treat myself to a comforting and tasty dish. Perfect for a family lunch or a dinner with friends, these tagliatelle are a true ode to simplicity and goodness. A tip? Add plenty of fresh chopped parsley for an extra touch of freshness!

Ingredients (9 ingredients)

  • Porcini mushrooms
  • 1 clove Garlic
  • 30 ml Extra virgin olive oil
  • 50 ml Dry white wine
  • 500 ml Tomato purée
  • Salt
  • Black pepper
  • 2 tbsp Chopped parsley
  • 320 g Egg tagliatelle

Preparation of the mushrooms

Carefully clean the porcini mushrooms, removing the earthy part of the stem with a small knife. Use a damp cloth to gently clean the mushrooms, rubbing them to remove any remaining dirt. Separate the cap from the stem and cut both parts into chunks.

Preparation of the garlic

Insert 1 clove of garlic into the bowl and chop: 3 sec./speed 7.

Sauté the garlic

Add 30 ml of extra virgin olive oil and sauté: 3 Min./120°C/speed 1.

Brown the mushrooms

Add the porcini mushrooms cut into chunks to the bowl and brown: 5 Min./120°C/speed 1.

Deglaze with the white wine

Thermomix® Setting
1 min/Varoma/Speed 1 Varoma

Deglaze with 50 ml of dry white wine: 1 Min./Varoma/speed 1, without measuring cup.

Cook the sauce

Thermomix® Setting

Add 500 ml of tomato purée, salt and black pepper to taste. Cook: 20 Min./100°C/speed 1.

Cook the tagliatelle

In the meantime, cook 320 g of egg tagliatelle in plenty of salted water according to the instructions on the package. Drain the tagliatelle al dente.

Stir the pasta

Add the drained tagliatelle to the bowl with the mushroom sauce and stir: 1 Min./speed 2/reverse. Add 2 tablespoons of chopped parsley.
