Description

This soft cake with cheese cream is a real treat! The base, enriched with bitter cocoa, perfectly matches the cheese cream, creating a delicious contrast. The preparation is quick and easy, ideal for a tasty snack or a special dessert. I often prepare it for my children's birthdays and it always goes like hot cakes! Try it, it's truly irresistible and its "feather" consistency makes it unique. Perfect to enjoy both hot and cold.

Ingredients (12 ingredients)

  • 5 piece eggs
  • 230 g sugar
  • 125 ml seed oil
  • 125 ml sparkling water
  • 325 g flour
  • 25 g bitter cocoa
  • 8 g vanilla yeast
  • 2 piece eggs
  • 70 g sugar
  • 500 g spreadable cheese
  • 20 g corn starch
  • 1 packet vanillin

Preparation (10 steps)

Preparation of the egg whites

Thermomix® Setting

Insert the butterfly. Put the egg whites in the bowl and whisk until stiff for 3 Min./Stufe 3.5. Transfer to a bowl and set aside.

Preparation of the base

Remove the butterfly. Put the egg yolks and 230 g of sugar in the bowl and mix for 2 Min./Stufe 3.

Addition of the liquid ingredients

30 Sec./Speed 3

Add 125 ml of seed oil and 125 ml of sparkling water and mix for 30 Sec./Stufe 3.

Addition of the dry ingredients

1 min/Speed 4

Add 325 g of flour, 25 g of bitter cocoa and 8 g of vanilla yeast. Mix for 1 Min./Stufe 4.

Incorporation of the egg whites

Transfer the mixture to a large bowl. Gently incorporate the whipped egg whites with a spatula, mixing from the bottom up so as not to break down the mixture.

Pour into the baking tray

Pour the mixture into a large, shallow baking tray (about 35 x 35 cm) previously lined with baking paper.

Preparation of the cheese cream

Thermomix® Setting
1 min/Speed 3

Put 500 g of spreadable cheese, 70 g of sugar, 2 eggs and 1 sachet of vanillin in the bowl. Mix for 1 Min./Stufe 3.

Addition of starch

Thermomix® Setting
30 Sec./Speed 3

Add 20 g of corn starch or potato starch and mix for 30 Sec./Stufe 3.

Decoration of the cake

Transfer the cheese cream to a pastry bag and draw lines over the base, creating a grid.

Baking in the oven

Bake in a preheated fan oven at 160 °C for 25-30 minutes, or in a preheated static oven at 170 °C for 25-30 minutes.
