Description

This potato soup is a real classic and warms you wonderfully from the inside on cold days! I especially like to make it when I need something quick, because it can be prepared in no time at all in the Thermomix®. The combination of potatoes, carrots and leek makes it nice and creamy and the Vienna sausages add a hearty note. A touch of marjoram is of course a must, it gives the soup that certain something. Served with toasted white bread cubes and fresh chives - simply delicious! If you like, you can also add a little nutmeg. Ideal for the whole family!

Ingredients (12 ingredients)

  • 5 piece large potato(es)
  • 1 piece Yellow carrot
  • 1 Stange Leek
  • 1 piece Onion(s)
  • 1 Liter Vegetable broth
  • to taste Parsley
  • to taste Pepper
  • 2 piece Vienna sausages
  • to taste White bread diced, roasted
  • to taste Chives
  • to taste Marjoram
  • 1 piece Bay leaves

Preparation (6 steps)

Prepare vegetables

Peel 5 large potatoes and 1 yellow carrot and cut into rough cubes. Dice 1 onion. Cut 1 stalk of leek into rings.

Sauté onions

3 min/248°F/Speed 1 120

Put the diced onion in the mixing bowl and chop for 3 sec./speed 5. Then add some oil and sauté for 3 min./120°C/speed 1.

Add leek

2 min/248°F/Speed 1 120

Add the sliced leek to the onions in the mixing bowl and sauté for 2 min./120°C/speed 1.

Add vegetable broth and vegetables

Add 1 liter of vegetable broth, the diced potatoes and carrot as well as 1 bay leaf to the mixing bowl and cook for 25 min./100°C/speed 1.

Puree soup

Thermomix® Setting
30 sec/Speed 8-10

After cooking, remove the bay leaf. Add parsley, marjoram, pepper and nutmeg to taste and puree for 30 sec./speed 8-10, slowly increasing the speed.

Arrange

Place the sliced 2 Vienna sausages in the soup plate and pour the hot potato soup over them. Garnish with the roasted white bread cubes and chives.
