Description

This rustic frittata is an explosion of Mediterranean flavors! Prepared with leeks, potatoes, fresh zucchini and enriched with delicate zucchini flowers, it is a perfect single dish for a Sunday brunch or a light dinner. The addition of cubed feta and chopped walnuts gives a crunchy and flavorful note. The purple cabbage marinated in vinegar and extra virgin olive oil completes the dish with a touch of freshness and color. I often prepare it in spring, when zucchini flowers are at their best. Any advice? Serve it warm with a glass of fresh white wine!

Mix well, add salt and pour a little water into the bowl. Close with the lid and cook: 6 Min./100°C/Stufe 1.

Purple cabbage

Chop the purple cabbage very finely in the bowl: 5 Sek./Stufe 5. Put the chopped cabbage in a bowl.

Cabbage marinating

Season the cabbage with salt and oil, add plenty of vinegar, mix and leave to marinate for 30 minutes outside the Thermomix.

Zucchini flowers

When the vegetables in the bowl are ready, also add the zucchini flowers and wilt: 1 Min./100°C/Stufe 1.

Beaten eggs

Break the eggs in a bowl, add salt, pepper and beat well outside the Thermomix.

Frittata

Add the eggs to the vegetables in the bowl, close with the lid and cook: 15 Min./90°C/Stufe 1.

Salad

Season the salad: first add the feta cut into pieces, then also add the chopped walnuts outside the Thermomix.

Turn the frittata

Turn the frittata using a plate and, turning it upside down with a sharp movement, put it back in the bowl and cook: 1 Min./90°C/Stufe 1.
