Description

This couscous salad is an absolute highlight for every barbecue or as a light lunch! I especially like to make it in the summer when the tomatoes and peppers are nice and ripe. The fresh lemon and aromatic herbs give the salad a special touch. The couscous absorbs the flavors wonderfully and makes it really juicy. If you like, you can crumble some sheep's cheese over it - it's a perfect match! The salad can be prepared very well and tastes delicious even the next day. A real all-rounder that is always well received!

Ingredients (18 ingredients)

  • 500 g Couscous Instant
  • 100 ml Olive oil
  • 150 ml Water
  • 1 piece Organic lemon(s)
  • 1 piece Bell pepper(s), red
  • 2 piece Beef tomato(es)
  • 0.5 piece Cucumber(s)
  • 2 Zehe(n) Clove(s) of garlic
  • 1 piece Onion(s), red
  • 1 tbsp Olive oil
  • 2 tbsp Balsamic vinegar, light
  • to taste Parsley
  • to taste Cumin seeds
  • to taste Caraway seeds
  • to taste Salt
  • to taste Pepper
  • to taste Coriander seeds
  • 200 g Sheep's cheese

Preparation (5 steps)

Prepare couscous

Thermomix® Setting
5 sec/Speed 3

Add 150 ml water, 100 ml olive oil, 2 tbsp lemon juice and salt to the mixing bowl and mix for 5 sec/speed 3. Then pour the couscous into a bowl and pour the liquid over it. Leave to swell for 5 minutes and add a little olive oil and lemon juice if necessary if the couscous is too dry. Put garlic cloves in the mixing bowl and chop for 3 sec/speed 7. Stir the chopped garlic into the couscous.

Prepare spice mixture

Thermomix® Setting
10 sec/Speed 8

Grate the zest of one lemon and add it to the mixing bowl together with cumin, caraway, coriander, parsley, salt and pepper. Chop for 10 sec/speed 8. Add the spice mixture to the couscous and mix in.

Prepare vegetables

Wash cucumber. Core peppers and tomatoes. Cut everything into small cubes and place in a large bowl.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Peel, halve and place the red onion in the mixing bowl. Chop for 3 sec/speed 5. Add 1 tbsp olive oil and sauté for 3 min./120°C/speed 1. Add balsamic vinegar and reduce for 1 min./100°C/speed 1. Add the onions to the rest of the salad.

Complete salad

Mix the couscous and vegetables in the bowl. Season with salt, pepper and the remaining spices. Finely crumble the sheep's cheese by hand and mix into the salad. Add roasted pine nuts, pistachio kernels or almonds as desired. Mix in a little more olive oil and garnish.
