Description

These cauliflower patties are a delicious and vegetarian alternative to classic meatballs. With the Thermomix®, the ingredients can be quickly chopped and mixed. The patties are prepared in about 45 minutes and are suitable as a main course, side dish or finger food. Ideal for a hearty meal or as a snack in between.

Ingredients (11 ingredients)

  • 500 g Cauliflower (in florets)
  • 2 piece Eggs
  • 50 g Breadcrumbs (or semolina for more binding)
  • 50 g Grated cheese (e.g. Gouda or Parmesan)
  • 1 piece Small onion
  • 1 clove Clove of garlic
  • Salt
  • Pepper
  • Nutmeg (classic) or curry (for pep)
  • Fresh parsley
  • 50 g Chopped walnuts

Preparation (6 steps)

Chop onion, garlic and parsley

Add 1 small onion, 1 clove of garlic and optionally fresh parsley to the mixing bowl and chop for 5 sec./speed 5.

Scrape chopped ingredients down

Use the spatula to scrape the chopped onion, garlic and parsley down from the edge of the mixing bowl.

Chop cauliflower

Add 500 g cauliflower florets to the mixing bowl with the remaining ingredients and chop for 4 sec./speed 4. Depending on the desired coarseness, the time can be increased to 5 seconds.

Pre-cook cauliflower (optional)

For softer patties, pre-cook the chopped cauliflower for approx. 8 min./Varoma/speed 1. For more bite, this step can be skipped. Leave the measuring cup on.

Mix ingredients

Add 2 eggs, 50 g breadcrumbs (or semolina), 50 g grated cheese (e.g. Gouda or Parmesan) and spices (salt, pepper, nutmeg or curry) to the cauliflower in the mixing bowl. Mix everything for 20 sec./reverse/speed 3.

Form and fry patties

Form small meatballs from the mixture. Bake in a pan with a little oil until golden brown or cook in the oven at 200 °C for approx. 20 min.
