Description
This delicate white fish stock is a fantastic base for soups, sauces, and risottos. I've been making this recipe for years, and it always adds a depth of flavor that you just can't get from store-bought stock. It's surprisingly easy to make, and the Thermomix® makes it even simpler. The bouquet garni adds a lovely herbal note, and the white wine gives it a subtle acidity. Feel free to add shellfish shells for an even richer flavor. This stock keeps well in the fridge or freezer, so you can always have some on hand.
Ingredients (4 ingredients)

1 piece onion

1 kg white fish
-
250 ml white wine
-
1 bunch bouquet garni
Preparation (5 steps)
Chop the onion
Place the onion in the mixing bowl and chop for 3 sec./Stufe 5.
Sauté the onion and fish
Add the white fish to the mixing bowl and cook for 4 mins./120°C/Stufe 1.
Add wine, water, and herbs
Pour in the white wine and 1 litre of cold water. Add the bouquet garni and a pinch of salt to the mixing bowl.
Simmer the stock
Bring to the boil, then reduce the heat to a simmer and cook for 20 mins./100°C/Stufe 1, skimming when needed.
Strain the stock
Pass the stock through a sieve to remove any solids.
