Description

This pasta dish is a real treat, perfect for a quick lunch or a light dinner. I love the combination of creamy fresh cheese sauce, juicy cherry tomatoes and fragrant pesto. Mushrooms add an extra touch of flavor. It's a dish I make often, because it's simple to make and always appreciated. You can easily vary the vegetables depending on the season. A little fresh basil, chopped just before serving, and it's a delight! Ready in less than 30 minutes, it's ideal for weeknights.

Ingredients (7 ingredients)

  • 150 g of pasta (here fusilli bucati)
  • 100 g of light plain fresh cheese
  • 200 g of cherry tomatoes, halved
  • 2 c. à s. of pesto
  • 150 g of mushrooms, chopped
  • to taste Fresh basil
  • 1 c. à s. of oil

Preparation (4 steps)

Cooking the pasta

Thermomix® Setting
10 min/212°F/Speed 1 100

Fill the Thermomix bowl with 1 liter of water. Add a pinch of salt. Program 10 Min./100°C/Stufe 1. Add 150 g of pasta and cook according to the instructions on the package (about 10-12 minutes).

Preparing the sauce

Thermomix® Setting
5 min/248°F/Speed 1 120

While the pasta is cooking, empty the water from the bowl. Add 1 tbsp of oil and 150 g of chopped mushrooms. Sauté 5 Min./120°C/Stufe 1.

Adding ingredients to the sauce

Thermomix® Setting
3 min/140°F/Gentle stir speed/Linkslauf 60 Reverse

Add 2 tbsp of pesto and 100 g of fresh cheese. Simmer 3 Min./60°C/Sanftrührstufe/Linkslauf until a smooth sauce is obtained.

Final mixing

Thermomix® Setting
1 min/99°F/Gentle stir speed/Linkslauf 37 Reverse

Add the cooked and drained pasta, and 200 g of cherry tomatoes, halved. Mix gently 1 Min./37°C/Sanftrührstufe/Linkslauf. Serve immediately with fresh basil leaves.
