Description

This pasta with wild mushrooms is a feast for the senses! I especially like to make it in the fall, when fresh porcini and ovoli mushrooms are in season. The combination of the earthy mushrooms, the fresh lemon flavor and a hint of pepper is simply unbeatable. The preparation is simple and succeeds with the Thermomix® in no time. An ideal dish for a quick lunch or a cozy dinner with friends. If you like, you can add some freshly grated Parmesan cheese on top. Simply delicious!

Ingredients (15 ingredients)

  • Flour
  • Durum wheat flour or semolina
  • Eggs
  • Egg yolk
  • Extra virgin olive oil (EVO)
  • to taste Salt
  • Porcini mushrooms
  • Ovoli mushrooms
  • White wine
  • Spring onions
  • Parsley
  • Lemon
  • Extra virgin olive oil (EVO)
  • to taste Salt
  • to taste Black pepper

Preparation (7 steps)

Prepare pasta

Thermomix® Setting
3 min/Kneading speed

Add Flour, Durum wheat flour or semolina, Eggs, Egg yolk, Extra virgin olive oil (EVO) and Salt to the mixing bowl and process for 3 min./kneading stage to a smooth dough. Wrap the dough in cling film and let rest for 20 minutes.

Prepare mushrooms

Clean and slice the porcini mushrooms and ovoli mushrooms. Clean and finely chop the spring onions. Wash and chop the Parsley.

Prepare sauce

Thermomix® Setting
3 min/248°F/Speed 1 120

Put Extra virgin olive oil (EVO) and Spring onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Cook mushrooms

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add porcini mushrooms and ovoli mushrooms and cook for 5 min./100°C/reverse rotation speed 1. Pour in White wine and let it reduce for another 2 min./100°C/reverse rotation speed 1. Season with Salt and Black pepper.

Cook pasta

In the meantime, cook the pasta according to the package instructions.

Mix pasta and sauce

Thermomix® Setting
1 min/Linkslauf Speed 1 Reverse

Drain the cooked pasta and add it directly to the mixing bowl with the sauce. Add Parsley and mix for 1 min./reverse rotation speed 1.

Serve

Arrange the pasta on plates and serve with freshly ground Black pepper and grated Lemon.
