Description

These steamed dumplings with minced meat filling, also called Mantu, are a hearty dish that originated in Afghan cuisine. The small dumplings are traditionally filled with a spicy minced meat mixture and steamed. A creamy yogurt sauce with garlic and coriander and a chickpea stew are served with it. The preparation is a bit more complex, but the result is a feast for the palate. Perfect for a cozy family dinner on cold days or as a special dish for guests. The combination of the soft dumplings, the spicy meat and the fresh yogurt sauce is simply irresistible!

Ingredients (16 ingredients)

  • 200 g Chickpeas
  • 250 g Wheat flour type 405
  • 1 Pck. Yeast
  • 250 ml Water
  • 6 tsp Oil
  • 1 tsp Salt
  • 500 g Onions
  • 300 g mixed minced meat
  • 1 tsp Pepper
  • 1 tsp Tomato paste
  • 1 tsp Sweet paprika
  • 1 tsp Cumin (ground)
  • 1 tbsp dried mint
  • 1 clove Garlic
  • 500 g Yogurt
  • 5 Stiel Coriander

Preparation (10 steps)

Prepare chickpeas

Soak 200 g chickpeas in water overnight and let them swell.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 250 g wheat flour type 405, 1 pack. yeast, 150 ml water, 2 tsp oil and 0.5 tsp salt into the mixing bowl and knead for 2 min./kneading stage to form a dough. The dough should be soft and not stick to your hands. Let the dough rest for about 30 minutes.

Chop onion

Thermomix® Setting

Peel and quarter 1 onion and place in the mixing bowl. Chop 3 sec./level 5.

Fry minced meat

Remove the chopped onion from the mixing bowl. Heat 2 tsp of oil in a pan and fry 300 g of mixed minced meat in it until crumbly. Add onion and sauté briefly. Season with salt and pepper.

Shape and steam Mantus

Thermomix® Setting
30 min/Varoma/Speed 1 Varoma

Roll out the dough thinly and cut into small squares. Place some of the minced meat filling in the middle and stick the corners together over the filling. Distribute Mantus in a steamer insert in the Varoma. Put 500 ml water into the mixing bowl, place Varoma on top and steam for 30 min./Varoma/level 1.

Chop onions (stew)

Peel and quarter remaining onions (approx. 400g) and place in the mixing bowl. Chop 3 sec./level 5.

Prepare stew

Thermomix® Setting
15 min/212°F/Speed 1 100

Put 2 tsp oil and the chopped onions into the mixing bowl and sauté for 3 min./120°C/level 1. Add 1 tsp tomato paste, 1 tsp sweet paprika, 1 tsp cumin (ground) and sauté for 1 min./100°C/level 1. Add 100 ml water and the soaked chickpeas and simmer for 15 min./100°C/level 1. Season with salt.

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Peel 1 clove of garlic and place in the mixing bowl. Chop 3 sec./level 7.

Prepare yogurt

Remove the chopped garlic from the mixing bowl and mix with 500 g yogurt and salt and pepper. Wash 5 sprigs of coriander, shake dry, chop and mix into the yogurt.

Serve

Serve Mantus with stew and some yogurt. Sprinkle with 1 tbsp dried mint.
