Description

This vodka spaghetti sauce is a quick and easy dish for two people. The sauce is prepared in the Thermomix® and consists of shallots, garlic, chili, tomato paste, vodka and whipped cream. It is ready in just 15 minutes and is ideal as a main course for the end of the working day. The sauce is hearty and can be served with Parmesan and parsley as desired.

Ingredients (9 ingredients)

  • 40 g Shallot or onion
  • 1 piece Clove of garlic
  • Fresh chili
  • 1 tbsp Oil
  • 40 g Tomato paste
  • 40 g Vodka
  • 100 g Whipped cream
  • Salt
  • Pepper

Preparation (6 steps)

Chop shallot, garlic and chili

Add 40 g shallot or onion, 1 clove of garlic and some fresh chili to the mixing bowl and chop for 3 sec. / level 7. Push down with the spatula.

Add 1 tbsp oil and sauté for 3 min. / 120 °C / level 1.

Sauté tomato paste

Add 40 g tomato paste and sauté for 2 min. / 120 °C / level 1.

Deglaze with vodka and reduce

Add 40 g vodka, reduce for 1 min. / Varoma / level 1 without the measuring cup.

Heat cream

Add 100 g whipped cream, salt and pepper, heat for 4 min. / 90 °C / level 2.

Puree sauce (optional)

Optional: puree for 10 sec. / level 8 for a smooth sauce.
