Description

Frico Friulano is a delicious alternative to the traditional potato tortilla, but without egg. This Italian recipe, originally from the Friuli region, combines grated potatoes with a mixture of cured cheeses, creating a crispy texture on the outside and soft on the inside. I often prepare it for a weekend brunch or as an original appetizer. The key is to use a good cow's cheese, preferably Montasio, and cook it over low heat so that it browns without burning. It is a simple, tasty and perfect dish to share! It is also an excellent vegetarian and gluten-free option.

Ingredients (8 ingredients)

  • 500 g Potato
  • 300 g Cow's cheese, preferably Montasio, of different degrees of curing
  • 1 piece Onion
  • Salt
  • Pepper
  • 1 ramillete Basil to decorate
  • 2 tbsp Extra virgin olive oil to cook the onion
  • 1 tbsp Extra virgin olive oil to set the frico

Preparation (7 steps)

Grate the potatoes and cut the onion

Peel the potatoes and grate them. Cut the onion into julienne strips. Reserve.

Sauté the onion

Add two tablespoons of extra virgin olive oil to the glass. Incorporate the julienned onion and sauté 8 Min./120°C/Stufe 1.

Add the grated potatoes

Add the grated potatoes to the glass. Season with salt and pepper to taste. Cook 14 Min./100°C/Linkslauf Stufe 1.

Grate the cheese

While the potatoes are cooking, grate the different types of cow's cheese. Reserve.

Mix potatoes, onion and cheese

Pour the potato and onion mixture into a bowl. Add the grated cheese and stir well to ensure everything is well distributed.

Brown the frico

Heat a double pan with a pinch of extra virgin olive oil. Pour the mixture into the pan and press lightly with the slotted spoon so that the shape settles. Cook over low heat for 3 Min./keine/Stufe 1 on each side, watching so that it browns but does not burn.

Turn over and set

Turn the frico over and cook on the other side for 3 Min./keine/Stufe 1, until golden brown and set. The mixture will set thanks to the cheese.
