Description

This creamy ham soup with fresh mushrooms is a real treat and can be prepared in a flash in the Thermomix®! The combination of spicy ham, fresh mushrooms and a creamy cream-egg yolk mixture makes this soup a special experience. A shot of vodka rounds it off perfectly and gives the soup a fine note. Ideal as a warming meal on cold days or as a festive appetizer. The preparation is very simple and guaranteed to succeed! If you like, you can garnish the soup with fresh herbs.

Ingredients (16 ingredients)

  • 50 g Clarified butter
  • 100 g Ham raw, diced
  • 300 g Mushrooms fresh, quartered
  • 2 piece Onion(s) diced
  • 1.5 can Tomato(es) peeled, diced
  • 125 ml Broth instant
  • 250 ml Wine white
  • 2 clove Garlic clove(s) chopped
  • 1 tsp Paprika powder hot
  • 1 tsp Sugar
  • 1 pinch Thyme
  • 1 pinch Rosemary
  • 1 pinch Pepper
  • 1 container Sweet cream
  • 2 piece Egg yolk
  • 1 Schuss Vodka

Preparation (6 steps)

Prepare ham and onions

Provide 100 g of raw ham diced and 2 onions diced.

Fry ham

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 50 g clarified butter in the mixing bowl and melt for 3 min./120°C/speed 1. Then add 100 g of diced raw ham and sauté for 3 min./120°C/speed 1.

Sauté vegetables

Thermomix® Setting

Add 300 g quartered mushrooms and 2 diced onions and sauté for 3 min./120°C/speed 1.

Cook soup

15 min/212°F/Speed 1 100

Add 1.5 cans of peeled, diced tomatoes, 125 ml of instant broth, 250 ml of white wine, 2 chopped garlic cloves, 1 tsp of hot paprika powder, 1 tsp of sugar, 1 pinch of thyme, 1 pinch of rosemary and 1 pinch of pepper and cook for 15 min./100°C/speed 1.

Refine soup

Thermomix® Setting
2 min/176°F/Gentle stir speed 80

Whisk 2 egg yolks and 1 container of sweet cream and add to the mixing bowl. Stir in for 2 min./80°C/gentle stir setting. The soup must no longer boil!

Season with vodka

Season the soup with a shot of vodka and serve.
