Description

These stuffed zucchini are a real eye-catcher and taste simply delicious! I especially like to make them in the summer when the zucchini comes fresh from the garden. The creamy mashed potatoes, refined with rocket and tomatoes, harmonize perfectly with the mild zucchini flavor. The cheese gives the zucchini boats a nice crust. A great dish for a relaxed lunch or a light dinner. If you like, you can add some feta cheese. The recipe is vegetarian and can be prepared well.

Ingredients (8 ingredients)

  • 500 g Potatoes
  • 2 tbsp Salt
  • 1 clove Garlic
  • 100 g Rocket
  • 100 g Cocktail tomatoes
  • 1 tbsp Rapeseed oil
  • 150 g Grated cheese
  • 300 ml Vegetable broth

Preparation (9 steps)

Peel and prepare potatoes

Peel, wash and cut 500 g potatoes into coarse pieces. Place the potato pieces in the simmering basket.

Cook potatoes

25 min/Varoma/Speed 1 Varoma

Put 1000 ml water and 2 tbsp salt into the mixing bowl. Insert simmering basket and cook for 25 min./Varoma/speed 1.

Prepare mashed potatoes

Thermomix® Setting
20 sec/Speed 4

After the cooking time, remove the simmering basket and empty the water from the mixing bowl. Put the cooked potatoes back into the mixing bowl and process into puree for 20 sec./speed 4. Help with the spatula if necessary.

Refine puree

Add milk and stir in for 10 sec./speed 3. Season with salt and pepper.

Prepare zucchini

Wash the zucchini, rub dry, remove the ends and cut in half lengthwise. Carefully remove the pulp with a spoon, then season the zucchini halves with salt and pepper.

Chop garlic

Peel 1 clove of garlic, put in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Prepare zucchini filling

3 min/248°F/Speed 1 120

Add 1 tbsp rapeseed oil and the removed zucchini pulp and sauté for 3 min./120°C/speed 1.

Mix filling

10 sec/Linkslauf/Speed 2 Reverse

Wash 100 g rocket, shake dry and chop coarsely, set aside a small portion. Wash and quarter 100 g cocktail tomatoes. Stir the sautéed zucchini pulp together with the rocket and tomatoes into the mashed potatoes in the mixing bowl. 10 sec./reverse/speed 2. Season with salt and pepper.

Fill and bake zucchini

Fill the zucchini halves with mashed potatoes, sprinkle with 150 g grated cheese and place side by side in a casserole dish. Pour in 300 ml vegetable broth and bake in a preheated oven at 175 °C circulating air for about 45 minutes. Sprinkle with the remaining rocket.
