Description

This recipe for spaghetti with Parmesan spinach sauce is a quick and easy dish, ideal for student cuisine. The creamy sauce of baby spinach, Parmesan and egg yolk is prepared in the Thermomix® and mixed with the spaghetti. In just 20 minutes, this vegetarian main course is ready and offers a delicious meal for two servings.

Ingredients (7 ingredients)

  • 200 g Spaghetti
  • 1 piece Clove of garlic
  • 200 g Baby spinach
  • 50 g Vegetarian Parmesan
  • 2 piece Egg yolk
  • Salt
  • Black pepper

Preparation (7 steps)

Cook spaghetti

Cook the spaghetti in boiling salted water according to package directions until al dente. Then drain and set aside.

Prepare garlic

Peel and chop 1 clove of garlic.

Prepare spinach

Clean, wash and shake dry 200 g of baby spinach.

Grate Parmesan

Put 50 g of vegetarian Parmesan in the pot 10 sec. level 5

Prepare spinach sauce

Thermomix® Setting

Add 200 g baby spinach, 30 g Parmesan, 2 egg yolks, 1 chopped clove of garlic and 100 ml pasta cooking water to the mixing bowl and puree for 30 sec./level 8.

Season sauce

Season the sauce with salt and pepper.

Mix spaghetti with sauce

Drain the pasta. Place the pot on the switched-off, still hot stove top. Mix the pasta with spinach sauce in it using the residual heat until creamy. Arrange with remaining Parmesan (20 g) and serve.
